It seems pretty safe to keep pancake batter (with eggs and butter) in the fridge for 3-4 days, although some recipes do say it is OK for one week.
Using an airtight plastic container is often recommended, and I would expect that one week may be right in that sort of container.

You can of course, always freeze the batter for later. That works well.

Another option is to make up all the batter into pancakes, and freeze the ready made ones, with grease-proof paper in between, and then microwave them, to eat when needed.

I’ve just eaten pancakes on a Thursday, using batter made on the Monday. The batter needs remixing each day, as it tends to separate when left for a while.

Shrove Tuesday

Shrove Tuesday (widely known as Pancake Day) is a day in February or March, preceding Ash Wednesday (the first day of Lent), which is celebrated in many countries by consuming pancakes.

In the past, Catholics did fast from products such as milk, eggs, and butter, during the Lent period.

It was therefore very common for people to consume what was left of these on the Tuesday (Shrove Tuesday*) before the fasting of Lent began from Ash Wednesday.

Pancake Mix:
Milk, Eggs, and Butter.

This led to that Tuesday becoming known as Pancake Day.

*Shrove Tuesday (widely known as Pancake Day) is a Christian Feast day in February or March, preceding Ash Wednesday.
